Green papaya salad – Core or 1 pt
I first had this salad at a little Thai restaurant. It cost me $6.00. Found out I could make it for far less. Shop the asian markets and you will be able to find everything you need.
- 3 cups peeled green papaya, shredded*
- 1 cup carrots, shredded
- 6 oz. small salad shrimp
- 1 clove garlic, minced
- 1/3 c. cilantro, chopped
- 3 T. lime juice
- 1 1/2 T. fish sauce
- 1 T. splenda
- 1 serrano chile, finely chopped – or to your taste
Mix everything together and enjoy! At the restaurant they served it over the top of some ice berg lettuce. Serves 4
You can also substitute green mango for the green papaya.
*You will need to either julienne this very finely or you can find a special type of veg. peeler that will do it for you. I bought mine at the same asian market for $1.00.
